Smash Burgers
Crispy-edged, juicy smash burgers with that irresistible diner-style crust — fast food has nothing on these.

Ingredients
- 1 lb ground beef (80/20)
- 4 slices American cheese
- 4 hamburger buns, toasted
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Pickle slices, for serving
- Ketchup and mustard, for serving
- Shredded lettuce, for serving
- 1 small onion, thinly sliced (optional)

Form the balls: Divide beef into 8 equal portions (about 2 oz each). Roll loosely into balls — don’t overwork them.

Heat the skillet: Get a cast iron skillet ripping hot over high heat. Add a thin layer of oil.

Smash: Place 2-4 balls on the skillet. Use a sturdy spatula to press each one flat — really smash them thin. Season with salt and pepper immediately.

Cook: Let cook without moving for 2-3 minutes until the edges are deeply browned and crispy. Flip, add a slice of cheese to half of them, and cook 1 minute more.

Stack and serve: Stack two patties per bun. Add pickles, lettuce, onion, and your favorite condiments.
Notes
- Storage: Best eaten immediately. Cooked patties can be reheated in a hot skillet.
- Variations: Add special sauce (mayo, ketchup, relish, and a splash of vinegar mixed together).
- Tips: The key is a screaming hot pan and thin patties. Don’t press down after the initial smash — you’ll lose the juices.
