Sloppy Joes

Sweet, tangy, and messy in the best way — this classic comfort food comes together faster than you'd think.

dinner prep: 5 min cook: 20 min serves 4

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste
  • 4 hamburger buns, toasted

Instructions

  1. Brown the beef: Cook ground beef in a large skillet over medium-high heat, breaking it up as it cooks, about 5 minutes. Drain excess fat.

  2. Soften the veggies: Add onion and bell pepper. Cook for 3-4 minutes until softened. Add garlic and cook 30 seconds more.

  3. Build the sauce: Stir in ketchup, brown sugar, mustard, Worcestershire, and vinegar. Bring to a simmer and cook for 8-10 minutes until thickened.

  4. Serve: Season with salt and pepper. Pile onto toasted buns.

Notes

  • Storage: The meat mixture keeps in the fridge for 4 days or freezes for up to 3 months.
  • Variations: Use ground turkey for a lighter version. Add a pinch of cayenne for heat.
  • Tips: Toast the buns in butter — it holds up better against the saucy filling.
  • Make Ahead: Make the meat mixture ahead and reheat when ready to serve.
