No-Bake Peanut Butter Bites

Ingredients
- 1 cup creamy peanut butter
- ½ cup honey
- 1 cup old-fashioned oats
- ½ cup mini chocolate chips
- ¼ cup ground flaxseed (optional)
- 1 teaspoon vanilla extract
- Pinch of salt

Mix: In a large bowl, stir together peanut butter, honey, and vanilla until smooth.

Add the dry stuff: Fold in oats, chocolate chips, flaxseed if using, and salt. Stir until everything is evenly combined.

Roll: Using a tablespoon or small cookie scoop, roll the mixture into balls. You should get about 20 bites.

Chill: Place on a parchment-lined plate or sheet pan. Refrigerate for at least 10 minutes to firm up.
Notes
- Storage: Keep in an airtight container in the fridge for up to 2 weeks or freeze for 3 months.
- Variations: Roll in shredded coconut, crushed pretzels, or cocoa powder. Swap almond butter for peanut butter.
- Tips: If the mixture is too sticky to roll, wet your hands slightly. If too dry, add another tablespoon of honey.
