No-Bake Peanut Butter Bites

Chewy, sweet peanut butter bites rolled in chocolate and oats — a three-bite dessert that takes zero baking skills.

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup honey
  • 1 cup old-fashioned oats
  • ½ cup mini chocolate chips
  • ¼ cup ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mix: In a large bowl, stir together peanut butter, honey, and vanilla until smooth.

  2. Add the dry stuff: Fold in oats, chocolate chips, flaxseed if using, and salt. Stir until everything is evenly combined.

  3. Roll: Using a tablespoon or small cookie scoop, roll the mixture into balls. You should get about 20 bites.

  4. Chill: Place on a parchment-lined plate or sheet pan. Refrigerate for at least 10 minutes to firm up.

Notes

  • Storage: Keep in an airtight container in the fridge for up to 2 weeks or freeze for 3 months.
  • Variations: Roll in shredded coconut, crushed pretzels, or cocoa powder. Swap almond butter for peanut butter.
  • Tips: If the mixture is too sticky to roll, wet your hands slightly. If too dry, add another tablespoon of honey.
