Korean Beef Rice Bowls

Sweet, savory, and a little spicy — these Korean-inspired beef bowls are the fast weeknight dinner you'll make on repeat.

Ingredients

  • 1½ lbs ground beef
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ⅓ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (adjust to taste)
  • Steamed white rice, for serving

For Topping

  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 cucumber, sliced
  • Kimchi (optional)

Instructions

  1. Brown the beef: Cook ground beef in a large skillet over medium-high heat, breaking it up, for 6-7 minutes until browned. Drain excess fat.

  2. Add aromatics: Stir in garlic and ginger. Cook 30 seconds.

  3. Make the sauce: Add soy sauce, brown sugar, sesame oil, rice vinegar, and sriracha. Stir and simmer for 3-4 minutes until the sauce reduces and coats the beef.

  4. Serve: Spoon over steamed rice. Top with green onions, sesame seeds, cucumber slices, and kimchi.

Notes

  • Storage: The beef keeps for 4 days in the fridge. Great for meal prep.
  • Variations: Use ground turkey or pork. Serve in lettuce wraps instead of over rice.
