Korean Beef Rice Bowls

Ingredients
- 1½ lbs ground beef
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- ⅓ cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha (adjust to taste)
- Steamed white rice, for serving
For Topping
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- 1 cucumber, sliced
- Kimchi (optional)

Brown the beef: Cook ground beef in a large skillet over medium-high heat, breaking it up, for 6-7 minutes until browned. Drain excess fat.

Add aromatics: Stir in garlic and ginger. Cook 30 seconds.

Make the sauce: Add soy sauce, brown sugar, sesame oil, rice vinegar, and sriracha. Stir and simmer for 3-4 minutes until the sauce reduces and coats the beef.

Serve: Spoon over steamed rice. Top with green onions, sesame seeds, cucumber slices, and kimchi.
