Tender-crisp green beans tossed in garlic butter and showered with Parmesan — the veggie side everyone actually asks for seconds of.
side • prep: 5 min • cook: 10 min • serves 4
Ingredients
- 1 lb fresh green beans, trimmed
- 2 tablespoons butter
- 3 cloves garlic, minced
- ¼ cup Parmesan cheese, grated
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
Instructions
-
Blanch the beans: Boil green beans in salted water for 3 minutes until bright green and tender-crisp. Drain and immediately run under cold water to stop cooking.
-
Sauté: Heat olive oil and butter in a large skillet over medium-high heat. Add garlic and cook 30 seconds until fragrant.
-
Toss the beans: Add green beans to the skillet. Toss in the garlic butter for 2-3 minutes until heated through and lightly charred in spots.
-
Finish: Remove from heat, toss with Parmesan and red pepper flakes if using. Season with salt and pepper.
Notes
- Storage: Keeps in the fridge for 3 days. Reheat in a hot skillet to revive the texture.
- Variations: Add toasted slivered almonds or crispy breadcrumbs for crunch. Use frozen green beans in a pinch — just skip the blanching.
- Tips: Don’t skip the cold water rinse after blanching — it keeps the beans bright green and snappy.
