Garlic Parmesan Green Beans

Tender-crisp green beans tossed in garlic butter and showered with Parmesan — the veggie side everyone actually asks for seconds of.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ¼ cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch the beans: Boil green beans in salted water for 3 minutes until bright green and tender-crisp. Drain and immediately run under cold water to stop cooking.

  2. Sauté: Heat olive oil and butter in a large skillet over medium-high heat. Add garlic and cook 30 seconds until fragrant.

  3. Toss the beans: Add green beans to the skillet. Toss in the garlic butter for 2-3 minutes until heated through and lightly charred in spots.

  4. Finish: Remove from heat, toss with Parmesan and red pepper flakes if using. Season with salt and pepper.

Notes

  • Storage: Keeps in the fridge for 3 days. Reheat in a hot skillet to revive the texture.
  • Variations: Add toasted slivered almonds or crispy breadcrumbs for crunch. Use frozen green beans in a pinch — just skip the blanching.
  • Tips: Don’t skip the cold water rinse after blanching — it keeps the beans bright green and snappy.
