Churro Bites
Crispy, cinnamon-sugar churro bites made from pantry staples — a warm, indulgent Mexican-inspired dessert in under 30 minutes.
Ingredients
For the Churro Bites
- 1 cup water
- ½ cup butter
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- Vegetable oil, for frying
For the Coating
- ½ cup sugar
- 1 tablespoon cinnamon
For the Chocolate Sauce
- ½ cup chocolate chips
- ¼ cup heavy cream

Make the dough: Bring water, butter, sugar, and salt to a boil in a saucepan. Remove from heat and stir in flour until a ball forms. Let cool 2 minutes, then beat in eggs one at a time until smooth and glossy.

Fry: Heat 2 inches of oil to 375°F in a heavy pot. Drop tablespoon-sized balls of dough into the oil (use two spoons or a small cookie scoop). Fry for 3-4 minutes, turning occasionally, until golden brown. Work in batches.

Coat: Mix cinnamon and sugar in a bowl. Toss hot churro bites in the cinnamon sugar immediately.

Make the dip: Microwave chocolate chips and cream together in 30-second bursts, stirring between, until smooth.

Serve: Pile churro bites on a plate with the chocolate sauce for dipping.
Notes
- Storage: Best eaten warm and fresh. Leftovers can be reheated in a 375°F oven for 5 minutes.
- Variations: Dip in dulce de leche or caramel sauce instead of chocolate. Stuff with Nutella using a piping bag.
- Tips: Make sure the oil is at 375°F — too cool and they’ll be greasy, too hot and the outside burns before the inside cooks.
