Churro Bites

Crispy, cinnamon-sugar churro bites made from pantry staples — a warm, indulgent Mexican-inspired dessert in under 30 minutes.

Ingredients

For the Churro Bites

  • 1 cup water
  • ½ cup butter
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • Vegetable oil, for frying

For the Coating

  • ½ cup sugar
  • 1 tablespoon cinnamon

For the Chocolate Sauce

  • ½ cup chocolate chips
  • ¼ cup heavy cream

Instructions

  1. Make the dough: Bring water, butter, sugar, and salt to a boil in a saucepan. Remove from heat and stir in flour until a ball forms. Let cool 2 minutes, then beat in eggs one at a time until smooth and glossy.

  2. Fry: Heat 2 inches of oil to 375°F in a heavy pot. Drop tablespoon-sized balls of dough into the oil (use two spoons or a small cookie scoop). Fry for 3-4 minutes, turning occasionally, until golden brown. Work in batches.

  3. Coat: Mix cinnamon and sugar in a bowl. Toss hot churro bites in the cinnamon sugar immediately.

  4. Make the dip: Microwave chocolate chips and cream together in 30-second bursts, stirring between, until smooth.

  5. Serve: Pile churro bites on a plate with the chocolate sauce for dipping.

Notes

  • Storage: Best eaten warm and fresh. Leftovers can be reheated in a 375°F oven for 5 minutes.
  • Variations: Dip in dulce de leche or caramel sauce instead of chocolate. Stuff with Nutella using a piping bag.
  • Tips: Make sure the oil is at 375°F — too cool and they’ll be greasy, too hot and the outside burns before the inside cooks.
