lunch • prep: 15 min • cook: 0 min • serves 4
Ingredients
- 2 cups cooked chicken breast, chopped
- 4 large flour tortillas (10-inch)
- 3 cups romaine lettuce, chopped
- ½ cup Caesar dressing
- ¼ cup Parmesan cheese, shaved
- ½ cup croutons, lightly crushed
- Freshly cracked black pepper
Instructions
-
Toss the salad: In a large bowl, combine romaine, chicken, Parmesan, and croutons. Drizzle with Caesar dressing and toss until evenly coated.
-
Fill the wraps: Divide the mixture evenly among the 4 tortillas, placing the filling in the center.
-
Roll: Fold the bottom edge over the filling, then fold in the sides and roll tightly away from you.
-
Serve: Slice in half at an angle. Hit it with a little cracked pepper on top.
Notes
- Storage: Wrap tightly in foil or plastic wrap and refrigerate for up to 1 day.
- Variations: Use grilled shrimp instead of chicken. Add sun-dried tomatoes or sliced avocado.
- Tips: Warm the tortillas for 10 seconds in the microwave before rolling — they’ll fold without cracking.
