lunch prep: 15 min cook: 0 min serves 4

Ingredients

  • 2 cups cooked chicken breast, chopped
  • 4 large flour tortillas (10-inch)
  • 3 cups romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ¼ cup Parmesan cheese, shaved
  • ½ cup croutons, lightly crushed
  • Freshly cracked black pepper

Instructions

  1. Toss the salad: In a large bowl, combine romaine, chicken, Parmesan, and croutons. Drizzle with Caesar dressing and toss until evenly coated.

  2. Fill the wraps: Divide the mixture evenly among the 4 tortillas, placing the filling in the center.

  3. Roll: Fold the bottom edge over the filling, then fold in the sides and roll tightly away from you.

  4. Serve: Slice in half at an angle. Hit it with a little cracked pepper on top.

Notes

  • Storage: Wrap tightly in foil or plastic wrap and refrigerate for up to 1 day.
  • Variations: Use grilled shrimp instead of chicken. Add sun-dried tomatoes or sliced avocado.
  • Tips: Warm the tortillas for 10 seconds in the microwave before rolling — they’ll fold without cracking.
