Caprese Bruschetta

Ingredients

  • 1 French baguette, sliced into ½-inch rounds
  • 4 Roma tomatoes, diced
  • 4 oz fresh mozzarella, diced small
  • ¼ cup fresh basil, chiffonade
  • 2 tablespoons olive oil, plus more for brushing
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, halved
  • Salt and pepper to taste

Instructions

  1. Toast the bread: Brush baguette slices with olive oil. Broil for 2-3 minutes until golden. Rub each slice with the cut side of the garlic clove while still warm.

  2. Make the topping: Toss diced tomatoes, mozzarella, and basil with olive oil and balsamic vinegar. Season with salt and pepper. Let sit for 5 minutes.

  3. Assemble: Spoon the tomato mixture onto each toasted bread slice.

  4. Serve: Arrange on a platter and serve immediately.
