Bacon Egg and Cheese Biscuits

Ingredients
- 4 large refrigerated biscuits (or homemade)
- 8 slices bacon
- 4 large eggs
- 4 slices sharp cheddar cheese
- 1 tablespoon butter
- Salt and pepper to taste
- Hot sauce (optional)

Bake the biscuits: Cook biscuits according to package directions (usually 12-15 minutes at 375°F).

Cook the bacon: While biscuits bake, lay bacon in a cold skillet and cook over medium heat, flipping occasionally, until crispy — about 8 minutes. Drain on paper towels.

Fry the eggs: In the same skillet, drain most of the bacon fat. Add butter and fry eggs to your liking. Season with salt and pepper.

Assemble: Split biscuits in half. Layer cheese on the bottom, then bacon, then the egg. Add hot sauce if you like. Cap with the top biscuit.
Notes
- Storage: Wrap individually in foil and refrigerate for up to 3 days. Reheat in a 350°F oven for 10 minutes.
- Variations: Add a sausage patty, swap cheddar for pepper jack, or use turkey bacon.
- Tips: Put the cheese on the warm biscuit first so it starts melting before you add the other fillings.
