Avocado Toast with Everything
Smashed avocado on thick toast loaded with a soft egg, everything seasoning, and pickled onions — brunch at home, no reservation needed.

Ingredients
- 4 slices thick sourdough bread, toasted
- 2 ripe avocados
- 4 eggs (soft-boiled or fried)
- 2 tablespoons everything bagel seasoning
- 1 tablespoon lemon juice
- Red pepper flakes
- Flaky sea salt
- Pickled red onions (optional)
- Microgreens or arugula (optional)

Cook the eggs: For soft-boiled: lower eggs into boiling water, cook 6½ minutes, then transfer to ice water. For fried: cook in butter over medium heat to your preference.

Smash the avocado: Halve and pit avocados. Scoop into a bowl, add lemon juice and a pinch of salt. Mash with a fork to your preferred texture.

Assemble: Spread avocado thickly onto each toast. Top with an egg. Sprinkle with everything seasoning, red pepper flakes, and flaky salt.

Finish: Add pickled onions and microgreens if using.

- Storage: Best made fresh. Avocado oxidizes quickly, so eat right away.
- Variations: Add smoked salmon, crumbled bacon, or cherry tomatoes. Swap everything seasoning for za’atar.
